follow your heart. especially when chocolate is the answer. i was craving chocolate today on an entirely different level than normal. the chocolate monster hit me like a ton of bricks! so for the days you're craving something chocolate and amazingly moist + good, here ya go!
ingredients | cake
1 cup vanilla almond milk | unsweetened (any non-dairy milk will suffice)
1 teaspoon of apple cider vinegar
3/4 cups raw cane sugar
1/3 cup coconut oil
1 teaspoon vanilla extract
1.5 teaspoon almond extract
1 cup all purpose flour
1/3 cup raw cacao powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
ingredients | frosting
1/2 can coconut milk -allow to chill for a few hours.
1/2 cup raw cacao powder
2-4 teaspoons of fresh brewed espresso - add slowly to the mix
few drops of vanilla extract
powdered sugar (add to taste, i eyeballed this ingredient)
*blend all ingredients together until smooth, tasting along the way.
*you can add more cacao or powdered sugar as needed.
*allow to set in fridge for an hour or so.
-pre-heat oven to 350
- whisk together the soy milk and vinegar in a large bowl; set aside for a few minutes for the milk to curdle.
-add sugar, oil, vanilla extract + almond extract to the curdled nut milk. it wont be really curdled but the texture will be noticeably different, that when you know it's time to add the sugar, etc.
-mix together in stand mixer (if you have one. if not a hand mixer is fine) until frothy.
-in a separate bowl sift the dry ingredients together. baking soda + powder included.
-add a cup at a time, slowly. mix until smooth.
-pour into lined cupcake tin
-bake for 20 mins. test 15 mins in with a toothpick.
-after baked, allow to cool for 40+ mins.
