jakfruit bbq tacons

what you need:

-flour or gmo-free corn tortillas

-1 can of jakfruit (if you can get it fresh, awesome, if not, the can will work just fine.)

-bbq sauce

-ketchup

-liquid smoke, hickory

-pepper

-himalayan pink salt

-brown rice (we use trader joe's frozen rice bags. so convenient!)

-guacamole (you can make your own or buy it from the store, either is fine)

what to do:

-cook down jakfruit in a small saucepan on medium heat. you will need a fork or masher to help with this process.

-as your jakfruit breaks down you want to add:

a dash of salt + pepper

4 tbsp ketchup

1/2 cup bbq sauce 

-continue to stir/mash until you get a 'pulled pork' looking texture. taste and add more bbq/ ketchup as needed. also, if it's a little tart, don't fret, you can add a little brown sugar to balance it out.

-allow the seasoned jakfruit to simmer on low, add a few drops of liquid smoke for a smoky bbq flavor

-warm tortillas and rice

-smear some guac on your warm tortilla

-add a couple spoonfuls of rice on top of the guac

- take jakfruit off of stove, add as much or little as you want to your tortilla 

-top with a dallop of guac + enjoy!

 

i'm no chef so i literally just throw things together. my friend and i made these last year and fell in LOVE.  it's fun making healthy meals that are veg friendly, especially when in a pinch. all in all this took about 35 mins to prepare + was super yummy!
